Meals That Matter

A client gave me a book called Vegetable, Animal, Miracle by Barbara Kingslover.  While I have just started reading the book, I am so intrigued to learn more about where our food really comes from and how we can make a difference in the way our food is processed.  I will share more fun facts with you about this book as I read further, but the most interesting fact so far is how much oil we can save by eating just one locally grown, organic meal per week.  In Kingslover's book, Steven L. Hopp, informs us that we use an alarming 400 gallons of oil per year on agriculture, per citizen of the United States.  That amount of oil is about 17% of all our nation's overall energy usage.  Most of the oil usage goes towards bringing the food from farms across the country to your dinner plate at 6pm.  How can we reduce our oil consumption?  Easy!  How many millions of barrels of oil do you think we could save if every United States citizen decided to eat just one meal a week of foods that are locally and organically grown?  Brace yourself, our country would decrease our oil consumption by 1.1 million barrels not per year but per week!  Better yet, you can decide that your organically grown meal be breakfast, lunch or dinner.  Summer is the perfect time to check out your local farmer's market and find some of these yummy, local treats.
